  1. Preheat your oven to 425°F (220°C).
  2. Wash the chicken thoroughly, both inside and out, and pat it dry with paper towels.
  3. In a small bowl, combine the minced garlic, thyme, rosemary, parsley, olive oil, salt, and pepper. Mix well to create a fragrant herb marinade.
  4. Carefully separate the skin from the chicken breast by sliding your fingers under the skin, being careful not to tear it. Gently rub half of the herb marinade under the skin, distributing it evenly.
  5. Slice one lemon into thin rounds and stuff them inside the chicken cavity, along with a few sprigs of fresh herbs.
  6. Rub the remaining herb marinade all over the outside of the chicken, ensuring it is thoroughly coated.
  7. Cut the remaining lemon into quarters and place them in the roasting pan.
  8. Place the chicken on a rack in the roasting pan, breast side up.
  9. Roast the chicken in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken occasionally with the pan juices for added flavor and moisture.
  10. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a moist and tender chicken.
  11. Carve the succulent lemon herb roasted chicken, serving it with the pan juices and roasted lemon quarters for an extra burst of flavor.
