  • 3 cups cooked Jasmine rice (preferably day-old)
  • 3/4 cup small shrimp, peeled and deveined
  • 3/4 cup BBQ pork (char siu), diced
  • 1/2 cup frozen peas and carrots, thawed
  • 1/2 cup bean sprouts
  • 1/2 cup green onions, thinly sliced
  • 2 large eggs, beaten
  • 3 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1/2 tsp sesame oil
  • Salt and white pepper, to taste


  1. If using freshly cooked rice, spread it out on a baking sheet and allow it to cool and dry for at least an hour. This will help prevent the rice from becoming too sticky during frying.
  2. Heat 1 tablespoon of vegetable oil in a large wok or non-stick skillet over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the pan and set aside.
  3. In the same pan, add another tablespoon of vegetable oil and stir-fry the shrimp until they turn pink and are cooked through, about 2-3 minutes. Remove the shrimp from the pan and set aside.
