Ingredients:
- 3 cups cooked Jasmine rice (preferably day-old)
- 3/4 cup small shrimp, peeled and deveined

- 1/2 cup frozen peas and carrots, thawed
- 1/2 cup bean sprouts
- 1/2 cup green onions, thinly sliced
- 2 large eggs, beaten
- 3 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1/2 tsp sesame oil
- Salt and white pepper, to taste
Instructions:
- If using freshly cooked rice, spread it out on a baking sheet and allow it to cool and dry for at least an hour. This will help prevent the rice from becoming too sticky during frying.
- Heat 1 tablespoon of vegetable oil in a large wok or non-stick skillet over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the pan and set aside.
- In the same pan, add another tablespoon of vegetable oil and stir-fry the shrimp until they turn pink and are cooked through, about 2-3 minutes. Remove the shrimp from the pan and set aside.

- Return the cooked shrimp and scrambled eggs to the pan. Add the bean sprouts and green onions, and stir-fry for an additional 2-3 minutes, until everything is heated through and well combined.
