  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1/3 cup freshly squeezed kalamansi juice

For the Frosting:

  • 1 cup unsalted butter, softened
  • 3 cups confectioners’ sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ cup freshly squeezed kalamansi juice
  • 1 tablespoon heavy cream (optional)

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate mixing bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Add the boiling water and kalamansi juice to the mixture and stir until the batter is smooth.
  6. Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. While the cakes are cooling, prepare the frosting. In a large mixing bowl, beat the butter until light and fluffy.
  9. Gradually add in the confectioners’ sugar and cocoa powder, mixing well after each addition.
  10. Add the vanilla extract, kalamansi juice, and heavy cream (if using) and beat until the frosting is smooth and creamy.
